Avocado Tahini Toast


Today we bring you one of our favourite breakfast recipes. It's not only quick and easy to make but it gives you a real boost of energy first thing in the morning!

You'll need...

2 slices of gluten-free bread (we'd recommend Genius)

1 avocado (ripe, with the flesh scooped out)

Cherry tomatoes (halved)

2 tsp lemon juice

2/3 tsp tahini

1 - pop your bread in the toaster

2 - using a fork, mash the avocado in a bowl and mix with the lemon juice

3 - spread the mixture over the toast evenly and top with tomatoes

4 - season and drizzle with tahini
